Thought I'd type out a guide for some of the character that appear in the novelisation, but not in the actual film, as I know we've mentioned Idath a couple of times, and I don't know if people who haven't read the novelisation might be a bit confused about it.
Idath
Idath is, like Mab, an immortal being of great power. He's known as the Lord of Death, or the Lord of Winter. Like Mab, he also rules over his own kingdom, called Anoeth, where the dead travel. He also leads the Wild Hunt, consisting of several forgotten gods and legends.
Looks-wise, Idath is described as having long red hair, and glowing red eyes. He is tall and gaunt in build. He wears a helmet with antlers on it, and hunting clothes (at least he is when Merlin meets him).
He and Mab used to be lovers, although they apparently no longer are, and it was he who gave Sir Rupert (the talking horse) to Merlin.
Herne
Herne, like Ambrosia, is a former servant of the Old Ways. He used to serve Lord Idath, before handing in his notice, as it were, to help the people suffering under an oppresive king. He still retains some magic from the time when he served Idath.
Whilst Elissa (Merlin's mother) is pregnant, and she and Ambrosia are living in the house in the woods, Herne lives near to them, and, apparently, grows rather fond of Elissa, although this is never gone into in much depth, as she dies in childbirth a few pages later. He's a friend to Merlin as he grows up.
When Merlin runs away from the Land of Magic to return to Ambrosia, Herne comes across Mab in Ambrosia's hut- realising that she has come back for Merlin, he attempts to fight her, only to be turned into a tree for his troubles.
Elissa
Although she appears in the film, very little is known about her. She is Merlin's mother, and the daughter of Queen Morgause of Orkney (who has died before the book starts). She is a novice at Avalon Abbey, and brings Ambrosia there for healing upon meeting her.
On the night that Mab creates Merlin, she is watching over the Holy Grail in the chapel of Avalon. When Mab casts her spell, Elissa falls pregnant, and the Grail disappears (although it's never explained why, and it seems to insinuate later on that Mab had nothing directly to do with the vanishing of the Grail). She's cast out of Avalon, and Ambrosia brings her to the house in the forest.

Loke
Never appears in the books, though he is referred to by his title- The Lord of Fire- whilst Merlin is thinking about the four elemental kings just before plunging Excalibur into the Mountain King's hand. Basically, he is Mab's (as well as the Lady of the Lake and the Mountain King's) brother. As well as being the Lord of Fire, he's also the Lord of Emotions. As far as fandom has built him up, he's a rather chaotic being. Like his sister, he can be somewhat tempremental, but unlike Mab, his most common mood tends towards rather laid back and mischievous, tending to take very little seriously. Whether it's because of this, the relationship between their elements, or the fact that Loke is the Lord of Emotions, and can generally be somewhat more perceptive about his sister's feelings than most, he and Mab get on far better than Mab does with either of her two other siblings.
I should emphasise that whilst we seem to have taken him to our hearts, he is NOT a canon character, and doesn't appear in the films or books, he was merely mentioned, and his name, personality, etc. have been built up in the fandom since then. If anyone feels like writing fanfic with a totally different interpretation of the Lord of Fire, then please feel free to
